Before Munich drank golden Helles, it drank Dunkel. This brown lager was the everyday beer of Bavaria for centuries, and it is still a favourite with locals who want something with a little more flavour.
Where does Dunkel come from?
Dunkel (“dark”) is the original Munich lager. Bavarian brewers were among the first to brew with bottom-fermenting lager yeast, stored in cool cellars, and the beer they made with their local, deeply kilned malts was brown. The style was so tied to the city that the dark, aromatic malt it uses is still called “Munich malt”.
When pale lagers arrived in the 1890s, Dunkel slowly lost ground. But every traditional Bavarian brewery still brews one, and the Hofbräuhaus in Munich has served Hofbräu Dunkel for generations.
What does Dunkel taste like?
- Look: Copper to chestnut brown and clear, with a tan head
- Aroma: Bread crust, toffee and toasted nuts
- Taste: Rich, smooth malt with a light sweetness and very little bitterness
- Finish: Soft and clean, never heavy
How to serve Dunkel

Dunkel in Australia
Dunkel lager is less common in Australia than wheat beer or Pilsner. Hofbräu Dunkel is the most widely available, at larger bottle shops and specialists. Watch out for “Dunkel” on wheat beer labels: Franziskaner Weissbier Dunkel and Erdinger Dunkel are dark wheat beers, not dark lagers. If you like Dunkel, try Schwarzbier next.

Is Dunkel beer heavy?
No. Despite its dark colour, Dunkel is a smooth, medium-bodied lager with a similar strength to a Helles. It tastes of bread crust, caramel and nuts, without the roasted bitterness or heaviness of a stout.
What is the difference between Dunkel and Schwarzbier?
Both are dark German lagers. Dunkel is brown and malty-sweet, with bread and caramel flavours. Schwarzbier is darker, almost black, and drier, with light roasted coffee and chocolate notes.
Which Dunkel can I buy in Australia?
Hofbräu Dunkel is the easiest Munich Dunkel to find in Australia, mostly at larger bottle shops and specialists. Don’t confuse it with Dunkelweizen, such as Franziskaner or Erdinger Dunkel, which is a dark wheat beer.
